Sometimes the most important thing we can do for ourselves and the people we love is simply slow down long enough to sit together, share a meal, and be present in the moment.

Creamy Tuscan Chicken Pasta

Ingredients:

2 boneless skinless chicken breasts, sliced

8 ounces penne pasta

2 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup grated parmesan cheese

1 cup spinach

1 cup cherry tomatoes, halved

1 teaspoon Italian seasoning

Salt and pepper to taste

How to Make It:

Cook pasta according to package instructions and set aside. In a large skillet, heat olive oil over medium heat and season chicken with salt, pepper, and Italian seasoning. Cook chicken until golden brown and fully cooked, then remove from skillet.

In the same skillet, add garlic and cook for about one minute until fragrant. Pour in heavy cream and parmesan cheese, stirring until smooth. Add spinach and cherry tomatoes and allow the spinach to wilt slightly. Return the chicken to the skillet and mix in the cooked pasta until fully coated in the sauce.

Serve warm with extra parmesan cheese and fresh parsley if desired.
