3 or 4 salmon filets
1 lb. baby Yukon gold
potatoes, halved
1 lb. asparagus, ends trimmed
3 Tbsp. olive oil
1 tsp. sea salt, divided
¼ tsp. garlic powder, divided
¼ tsp. pepper, divided
½ tsp. basil
½ tsp. oregano
½ tsp. parsley
½ tsp. thyme
2 Tbsp. butter, melted
1½ Tbsp. honey
½ tsp. stone ground mustard
lemon slices (optional)

Preheat the oven to 400 degrees. Line a large, rimmed baking sheet with aluminum foil. Make herb seasoning by stirring the basil, oregano, parsley and thyme together in a small bowl. Toss the halved potatoes in a medium-sized bowl with 2 Tbsp. olive oil, 1½ tsp. of the herb seasoning, ¼ tsp. sea salt, ⅛ tsp. pepper and ⅛ tsp. garlic powder until well-coated. Place potatoes onto the prepared baking sheet and roast for 15 minutes.

While the potatoes are cooking, add the remaining herb seasoning to the melted butter, honey, mustard, ⅛ tsp. garlic powder and ½ tsp. salt. Add equal parts of the butter mixture to the tops of each salmon filet. Toss 1 Tbsp. olive oil, ¼ tsp. salt and ⅛ tsp. pepper with asparagus until coated.

Remove the baking sheet from the oven and move the roasted potatoes to one side of the pan. Arrange the salmon and asparagus onto the baking sheet and cook for 12-15 minutes or until the salmon reaches an internal temperature of 125-130 degrees and the asparagus is fork-tender.

Add salt and pepper to taste. Serve with some lemon slices and enjoy! ::
