One Bowl Nourish Salad

This easy salad is designed to fuel your body, lift your mood, and give your soul a little love. It is colorful, fresh, and packed with simple ingredients that bring real energy.

Ingredients:

  • 2 cups mixed greens (spinach, arugula, or spring mix)
  • 1 cup cooked quinoa or brown rice
  • 1 small cucumber, sliced
  • 1 small carrot, shredded
  • 1 avocado, sliced
  • 1 handful cherry tomatoes, halved
  • 2 tablespoons roasted sunflower seeds or pumpkin seeds
  • 2 tablespoons crumbled feta cheese (optional)
  • Fresh lemon wedges

Simple Dressing:

  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Directions:

  1. In a large bowl, layer the greens, quinoa or rice, cucumber, carrot, avocado, and tomatoes.
  2. Sprinkle the seeds and feta over the top.
  3. In a small jar or bowl, whisk together the olive oil, lemon juice, honey, mustard, salt, and pepper.
  4. Drizzle the dressing over the salad just before serving. Toss gently.
  5. Squeeze a little extra fresh lemon over the top if you like it bright and fresh.
