RECIPE:
Power Bowl for a Power Woman Unstoppable Mama Quinoa Bowl

A nourishing, energizing meal made for busy moms, wonder women, and anyone who needs fuel that feels good. Packed with protein, fiber, color, flavor and customizable to fit every schedule and palate.

Ingredients:
For the base:
1 cup uncooked quinoa (or brown rice)
2 cups water or low-sodium veggie broth
Pinch of sea salt
Power toppings (mix and match based on your style):
1 cup chickpeas or grilled chicken, cooked
1 cup roasted sweet potatoes, diced
½ avocado, sliced
½ cup cherry tomatoes, halved
¼ cup shredded carrots
¼ cup cooked kale or spinach
2 tablespoons feta or goat cheese (optional)
1 tablespoon sunflower seeds or sliced almonds

Dressing:
2 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon honey or maple syrup
1 teaspoon Dijon mustard
Salt and pepper to taste

Instructions:
1. Cook the quinoa: Rinse quinoa under cold water. In a medium saucepan, combine quinoa, water (or broth), and a pinch of salt. Bring to a boil, then reduce to a simmer. Cover and cook for 15 minutes or until water is absorbed. Fluff with a fork and let cool slightly.

2. Prepare toppings: While quinoa is cooking, roast sweet potatoes (toss in olive oil, salt, and pepper; roast at 400°F for 20–25 minutes). Slice avocado, halve cherry tomatoes, and cook any greens.

3. Make the dressing: In a small bowl or jar, whisk or shake all dressing ingredients until well combined.

4. Assemble your power bowl: In a large bowl or meal-prep container, layer quinoa first. Add your chosen toppings in sections for that vibrant “bowl” look. Drizzle with dressing just before serving.

5. Optional upgrade: Top with a fried or poached egg for even more protein or add a dash of hot sauce if you like a kick.
